Touring their mill was jaw-dropping.

We followed the journey of the olive from start to finish:
- Harvesting
- Delivery of the olives
- De-leafing
- Thorough washing
- Crushing
- Malaxing
- Centrifugation
- Separation
- Immediate filtration
- Straight into large stainless steel tanks under inert gas

Into the Groves – Where the Magic Begins
From the mill, we headed into their groves – a breathtaking stretch of land north of Bari near Molfetta, Giovinazzo and Terlizzi, the heart of Italy’s olive-growing powerhouse.
We watched the harvest in action:

- modern shakers humming through the trees
- men wielding carbon-fibre sticks to gently coax the more stubborn olives down
- fruit hitting the nets with a rhythm that tells you:
this is a land born for olive oil
A Family Legacy Since 1878
The Ciccolella family has worked this land for over 4 generations, tending to nearly 8,000 trees of Coratina and Ogliarola barese.
Their ancestors once milled with traditional stone wheels, producing what locals called “yellow gold.”
Today, under Giuseppe Ciccolella, the tradition continues but with modern vision and world-class technology.
