Today, The Good Oil Club takes you behind the scenes to meet one of Tuscany’s most passionate and awarded producers — Fonte Di Foiano, run by brothers Paolo and Simone Di Gaetano.
We spent an unforgettable day with them — surrounded by the hum of the mill, the scent of freshly crushed olives, and the pure excitement that only true artisans bring to their craft. And yes… we got to taste their liquid gold straight from the final stage of transformation — moments before it flowed into the tank. Most people will never experience olive oil this fresh, but with Fonte Di Foiano’s bottles, you’ll get pretty close.
We rolled up our sleeves and joined the harvest — hands in the grove, hearts full. Watching those vibrant green olives become a medium-to-robust Tuscan IGP blend — crafted from Frantoio, Moraiolo, and Leccino — was pure magic.
This isn’t just oil. It’s bottled love, balance, and heritage in liquid form.
Back in 1979, Michele and Marina Di Gaetano settled in Bolgheri, driven by a simple dream — to build a life around olive trees. They restored old groves, planted new ones, and eventually built their own mill.
Today, their children — Paolo, Simone, and Beatrice — have elevated that dream into a state-of-the-art Frantoio that still beats with family passion and Tuscan soul.
Their estate spans 30 hectares and 10,000 trees, stretching from the coastal plains up to 150 metres above sea level. The mild Bolgheri microclimate — with no harsh temperature swings, just gentle sea breezes — gives their olives an extraordinary balance of flavour and fragrance.
Fonte Di Foiano’s modern mill cold-presses the fruit within hours of picking. Every step — from pressing to bottling — happens in temperature-controlled rooms under a protective blanket of inert gas, preserving every delicate polyphenol, every drop of aroma, and every note of that famous Tuscan bite.
This is where tradition meets innovation — and the result is some of the finest extra virgin olive oil you’ll ever taste.
