Every drop of Extra Virgin Olive Oil tells a story — one of soil, sun, craftsmanship, and respect for nature. From the hands of the farmer to the precision of the miller, it’s a process that transforms simple fruit into liquid gold

It all begins in the grove, where farmers tend to their trees year-round — nurturing the soil, pruning, and protecting the fruit as it ripens under the Mediterranean sun. These groves are living history, their roots running deep, their fruit carrying the flavour of the land. 

When harvest time arrives, every minute counts. The olives are picked and rushed to the mill — because freshness is everything. The first step is washing, to remove dust and leaves. Then comes crushing, where the olives are gently ground into a thick, aromatic paste — the first moment the rich, green aromas of fresh oil fill the air. 

Next is malaxation — a slow mixing of the paste that allows tiny droplets of oil to come together. It’s a delicate balance of time and temperature; too hot or too long and the precious aromas and polyphenols begin to fade. 

The paste then moves into the centrifuge, where the solids and liquids spin apart at high speed — the pomace separated from the oil-and-water mixture. A second decantation follows, carefully removing the last traces of water from the oil. What remains is pure, vibrant, and alive. 

To ensure clarity and longevity, its  then filtered  to remove any remaining olive particles that could spoil the flavour over time. 

Finally comes the storage — perhaps the most crucial step for preserving quality. The fresh oil is kept in stainless steel tanks, protected by an inert gas like argon or nitrogen to eliminate contact with oxygen. This keeps the oil stable, fresh, and bursting with antioxidants until the moment it’s ready to shine.
