Produced in San Polo, in the rolling hills of Chianti just south of Florence, often recognised by its “Black Rooster” emblem. This exceptional extra virgin olive oil is crafted by the Pruneti family, custodians of this land for more than 160 years. For generations, the Pruneti’s have farmed with respect, patience and an uncompromising commitment to quality — and Il Custode is the purest expression of that philosophy.

Certified Organic and PDO Chianti Classico, this oil is a faithful reflection of its terroir.

Cultivar

Made primarily from Frantoio, Moraiolo and Leccino olives, it is cold-extracted using only mechanical processes to preserve freshness, antioxidants and flavour integrity. Every harvest is carefully monitored, resulting in oils with exceptionally low acidity (as low as 0.17%) and impressively high polyphenol levels, delivering both flavour intensity and nutritional power.

In the glass, Il Custode glows deep green with golden highlights — a visual cue to its freshness and vitality.

Aroma

Vibrant and distinctly green. Immediate notes of fresh artichoke and rocket (arugula) lead the bouquet, layered with elegant hints of green almond, freshly cut grass and soft Mediterranean herbs. Clean, fresh and beautifully expressive of early-harvest fruit.

Palate

Structured yet beautifully balanced at a medium intensity. Pronounced flavours of artichoke and rocket sit at the core, supported by a refined herbaceous character and a pleasant, well-integrated bitterness that signals quality and phenolic presence without overpowering the dish.

Lingering, precise and gently assertive. A distinctive peppery spice builds gradually on the throat, accompanied by subtle notes of black pepper and green almond — a classic marker of fresh, premium extra virgin olive oil.
