Cultivar and Tasting Notes

The Quattrociocchi Classico is primarily a blend of Moraiolo, Leccino, and Itrana olive varieties, which contribute to its robust yet balanced characteristics.

Aroma

The oil has a medium-intense, complex, and powerful aroma characterized by vegetal notes, green grass, mint, and rosemary. You may also notice strong hints of unripe tomato, apple, sage, and celery.

Flavor

The taste is fine, elegant, and balanced, featuring Flavors of garden vegetables, chicory, lettuce, and a distinct almond finish. It has a balanced level of bitterness and a strong, pungent (spicy) finish that is both pleasant and robust.

Food Pairings

The balanced and versatile flavour profile of Quattrociocchi Classico makes it suitable for a wide range of uses, particularly as a finishing oil for both raw and moderately cooked dishes.

Salads and Vegetables: It pairs excellently with leafy green salads, garden salads, boiled or steamed vegetables, and grilled radicchio.

Fish and Meat: The oil complements broiled, grilled, or marinated fish (like swordfish or tuna), as well as white meats, grilled red meat, and poultry dishes like chicken cacciatore.

Soups and Legumes: Drizzling it over lentil soups, chickpea soup, or other legume-based dishes can add roundness and structure to the Flavors.

Cheeses and Appetizers: It is a great match for medium-aged or hard mature cheeses (such as Parmigiano-Reggiano), fresh ricotta, porcini mushroom starters, and classic bruschetta with tomato and basil.

Pastas and Risottos: Use it to finish off shellfish pastas, fettuccine with porcini mushrooms and parmesan, or artichoke risotto.

The Quattrociocchi extra virgin olive oil is produced by the Quattrociocchi family farm, located in Alatri in the heart of the Ciociaria region of Italy. The family’s philosophy combines a respect for over a century of tradition (dating back to 1888) with modern, sustainable practices, including organic farming methods and a commitment to quality and authenticity. The olives are exclusively grown on the family’s organic estate, hand-picked, and then milled daily in the company’s mill using a cold-extraction, continuous cycle process to ensure maximum freshness and preserve the oil’s complex flavors and high quality.
