What an incredible day we spent with the Olio Mimì Team.
From the moment we arrived, we were welcomed by Emanuele, the master miller, and the two owners; brothers Donato and Michele – three men bound by passion, precision, and a legacy of love.
The Mill – As Precise as Surgery
Emanuele is a force. Passionate. Methodical. Deadly serious about quality.
He took us through every stage of their immaculate, almost surgical mill:
- de-leafing
- cleaning
- crushing
- malaxing
- centrifuging (extraction)
- filtering
- storage
- bottling
Every movement had intention.
Every step was controlled.
Every sound told you that this was a place where excellence is engineered.
A Tasting Journey to Remember
After the tour, Emanuele guided us through their stunning range of oils – each one a clear expression of Puglian character, crafted with purity and purpose. We selected three from their range; Ogliarola, Peranzana and Coratina. Three different monocultivars each expressing a different intensity and flavour, delicate, medium and robust.
And then came lunch served with their Novello (new season oil).
Fresh, vibrant, grassy, alive.
Poured generously over simple food that turned into something unforgettable.
Delicious doesn’t even begin to cover it.
The Story of Mimì – A Dream That Lives On
The heart of this company is Domenico “Mimì” Conserva — Donato and Michele’s father.
Mimì spent his life working in transport but his soul was always in the red Puglian soil.
His true dream was olive oil.
He dreamed of groves, open skies, and a life dedicated to the land – but he passed away before he could build it.
So his family built it for him.
“Mimì is a desire, a dedication, a huge void we try to fill by carrying on the great dream of a man.”
Every tree they grow, every olive they harvest, every drop they bottle is a tribute to him. A tribute to his passion. A tribute to the life he never got to live, but one his family now lives for him – with heart, integrity, and absolute devotion.
