The Quattrociocchi Delicato extra virgin olive oil offers a delicate, harmonious flavour profile with prominent vegetal and almond notes.
The Quattrociocchi Delicato is a monocultivar (single-variety) oil produced from 100% Leccino olives.
The Leccino variety is well-appreciated for yielding a delicate oil that is sweet with balanced bitter and spicy notes.
Aroma: Broad and elegant, with strong vegetal hints of artichoke and chicory, enriched by aromatic notes of basil and mint, and a stand out note of black pepper and sweet almond.
Flavour: Refined and enveloping, the palate perceives tones of lettuce, with distinct hints of mint and rosemary. The bitterness and pungency are well-balanced and harmonious, with a pronounced sweet almond finish.
Appearance: Intense golden yellow colour with light green nuances.
This oil is versatile and best used as a finishing touch to preserve its delicate aromas. It is ideal for a variety of dishes including:
Seafood: Salmon or flathead carpaccio, grilled fish, grilled calamari, marinated trout, and first courses with shellfish.
Vegetables & Soups: Bean starters, vegetable purees, vegetable soups, and artichoke risotto.
Other: salads, fresh soft cheeses, and even oven-baked biscuits/cookies.

The Quattrociocchi extra virgin olive oil is produced by the Quattrociocchi family farm, located in Alatri in the heart of the Ciociaria region of Italy. The family’s philosophy combines a respect for over a century of tradition (dating back to 1888) with modern, sustainable practices, including organic farming methods and a commitment to quality and authenticity. The olives are exclusively grown on the family’s organic estate, hand-picked, and then milled daily in the company’s mill using a cold-extraction, continuous cycle process to ensure maximum freshness and preserve the oil’s complex flavors and high quality.
